Vegetables Marinated in Ginger-Tamari Dressing

This ginger-tamari, garlic, and sesame dressing is magic. I would drink it. 

Danny wanted to make marinated mushrooms, since we had about 3 pounds of them in the refrigerator, forgotten. We didn’t have any oil in the house but sesame and canola. So he played with flavors that work well with sesame: ginger, garlic, and tamari. The vegetables marinated and cooked in this are so deeply flavorful that they could make a meal without meat.
