Roasted Vegetables with Pear-Ginger Vinaigrette

This is the season of roasted vegetables. We roast vegetables on sheet trays at least twice a week, then let them sit in the refrigerator until we want to eat. This is the best method for persuading our kids to eat vegetables for snacks, casually. If we put down a plate of these with ranch dressing, they eat.

Danny made this pear-ginger vinaigrette for us instead.
