My Mom’s Bean Bake Casserole

This bean bake casserole — one of my favorite childhood dishes — is a good way to clean out the leftovers in the refrigerator. Leftover meat, some grated cheese, that half-empty can of refried beans — they can all be of use here. 

It’s like a Tex-Mex Midwestern casserole, with beans, meat, corn tortillas, and lots of melted cheese. It’s hard to resist. 

Use this as a template and make it a different way each week. You’re planning the same dinner every week but it’s a slightly new experience each time.
