Hasselback Potatoes

The last few days have been….interesting. Waiting for ballots to be counted across the country has been quite the stirring sight. This is what democracy looks like, truly. Our daughter has wanted this to be over — she is anxious. We are too. This uncertainty has been going on for four long years. Still, I’m stirred by it. Every single vote does matter. It really does.

Waiting? It’s hard to get anything done, anything that requires clear thoughts, at least. What does that make it? It’s carb time.

This Hasselback potatoes showed up for breakfast yesterday. Danny minds his meditation in making these. They require precise knife cuts, attention, and slowing down. I’m so glad he found his happy place by making these. I found it by eating them.
