I started making this grilled pineapple salsa after I had been promoted to sous chef at Papillon Café in Denver in the late 1990s. Our chef Frank developed a couple of little recipes to help us out with fish specials. He wanted some new flavors for us to work with, since I would be running the line. I especially liked making a grilled pineapple and mango salsa. I skipped the mango with this one but you can add it here if you want.
