Braised Chicken Thighs with Apple Cider and Bacon

It started to feel like fall that morning. A little chill in the air, the first tips of red leaves on trees. Danny saw the chicken thighs we had in the refrigerator and decided to braise them with apple cider we had made from the apples on our trees. Before he began, he started cooking bacon slices.

Once you have bacon slices sizzling in the oven—or a pan, if you only need to cook two or three slices—you start growing hungry. And when you grow hungry, the ideas come more easily.

At least that’s true for Dan. He starts cooking and he wants to cook more.

We sat on the back porch together, eating these chicken thighs, the air still warm but the chill layered on top of it. This dish was delicious.
