Bacon and Cheese Polenta Cubes


Sometimes, my favorite meals happen because I need to use up some ingredients we have in the refrigerator. 

For a few days, I was making batch after batch of polenta and making them into baked polenta fries, polenta croutons, polenta pizza crusts, and everything else I could imagine to do with polenta. Shauna remembers that her family used to eat fried cornmeal mush for breakfast, a Pennsylvania Dutch dish that came from her mother’s family. So I was going to set up another batch for that. 

When I looked in the refrigerator, I saw some cooked slices of bacon, a couple of green onions, and some cheddar cheese. Why not? 

This ended up being our favorite of the polenta dishes we made. It may not look like much — brown food can be hard to photograph — but it sure is delicious.
